Description
Piadina or Pida is a thin flatbread, typically
prepared in the Romagna region (Forlì-Cesena, Ravenna
and Rimini). It
is usually made with white flour, lard or olive oil, salt and water. It's
sometimes served instead of usual bread Piadina is normally filled with a
variety of cheeses, cold cuts and vegetables, but also with sweet fillings such
as jam or Nutella. You can buy Piadina at the many traditional little Piadina
kiosks and shops or in supermarkets. The crescione
is made using the same dough as piadina but it is sealed (like ravioli) and for
this reason in usually stuffed with soft stuffingns.
The Piadina has been added
to the list of the traditional regional food products of Italy of the Emilia-Romagna Region.

region. Its thickness depends on the area of production.
Tools
Piadina is usually hand kneaded and then flattened with a rolling pin. The
dough was traditionally cooked on a terracotta dish (called teggia in the Romagnolo dialect),
although nowadays flat pans or electric griddles are commonly used.
Ingredients
Water, flour, salt and lard (it makes piadina soft). It is usually filled with ham,
different cheeses, cold cuts, sausages, herbs...
Crescione is traditionally stuffed with herbs, although the variety of
different stuffings is quite big.
