Description
Squaquerone (Squaquaron in the romagnolo dialect) is a typical local cheese
that goes well together with piadina
This cheese is a variant (like the cassatella cheese) of the famous ravviggiolo cheese, which has however a
different salting and ripening process. Its main ingredient is whole raw
curdled cow milk. It has un undefined shape and it is really soft (that is
where its name comes from). It normally weighs from 1 to 3 kg and it is creamy and
milky but slightly sour. This cheese is produced all year round and should be
consumed while fresh within three day.
