Meat is
well known in Romagna for being really tasty. Beef
is obtained from the Romagnola cow; pork
meat is obtained from Mora Romagnola black pig, traditionally bred in Romagna. Sheeps, from which typical Castrato meat is
obtained are fed ion the grazing lands of the Rubicone hills. Because of their
strong taste, tose meats are suitable for the preparation of sauces and dishes
served in restaurants, trattorie and
local taverns as well as the production of traditional cold cuts (Mercato
Saraceno's Fair in May).
